I am on a mission to freeze as many local greens as possible for the winter. Here is my current favorite way to put up swiss chard. I love pesto, but it is too heavy and oily for me. This cuts back on the oil (but not the flavor) and gives you the bonus of an extra serving of healthy greens.
1 bunch basil 1 bunch swiss chard 3-6 cloves of garlic, crushed pinenuts or walnuts (a few tablespoons) 2 TBLS extra virgin olive oil (more or less depending on your taste) parmesan, if desired
Wash, stem, and steam the chard in a few tablespoons of water. I leave the leaves whole. Only steam until bright green, but soft. Transfer the chard to the blender. Blend until liquid. Add the basil leaves, garlic and oil and blend again. Salt to taste. I add the nuts and cheese right before serving. If freezing, I don't add the cheese and nuts until I defrost.

I spent a lovely day digging a "home" with Ben and Evie. We dug, looked at bugs, and speculated how long it would take to dig a hole as big as a house.

7:40 am - My baby is asleep and I can't sleep : (

After MONTHS of trying to get my baby to sleep, she is asleep and I have insomnia. Or really just not being able to sleep because of stress. I just found out I have to go back to work full time next year. I am so stressed out about making it work. I can't believe that I don't want to go back. I didn't think I would be able to maintain my sanity as a stay at home mom. Not that I am really : )
OK, the baby did wake up. I finally got her back to sleep for a bit and now it is morning.

12:28 pm - Dedication and Birthday!

Wow, it has been almost a month. Of course, I wanted to post these pictures right away, but these kids eat up all of my time : )
We celebrated Evie's dedication and Ben's birthday on the same day. I am happy to say that we will never have a baby dedication, a birthday, and Halloween in the same week.
I wrote this poem like thing for my Evie.

I often think of Ben's birth, how we planned and prepared, of how we gave him the perfect amount of tummy time and did baby yoga. I think of adopting Jenny, renovation our house to get ready, reading books and waiting endlessly. Then I think of your birth- how we didnt' even have time to make it to the hospital. And like your birth, your babyhood has flown by faster than we could notice, smiling, rolling, talking, sitting, almost crawling. And I often think I don't deserve your beautiful smile and sweet personality and that you deserve so much more attention. Then I see you laugh when Ben calls you "Evie Belevie" or when Jenny sings you "Head, Shoulders, Knees and Toes." In these moments, I know that you are blessed. I have always known that you are a blessing.

I found out last week that one of my all time favorite musicians, Luka Bloom, was playing at a family friendly festival near us. So we packed up our family and headed over. It was so much better than we ever could have imagined. The kids had a great time. There was a carnival, a train, dogs to pet, kids music and so much more. And to top all of that off, we met Luka Bloom. Doesn't Evie look excited : )

9:58 pm - Evie's birth

I honor of my daughter's one month birthday, I thought I would finally post her birth story : )
( I stole this from Keir's blog) I can hardly believe it, but Evie is exactly one month old today. As you could probably guess, I’ve been a bit busy lately. In case you’re wondering, everyone is doing great. We were concerned about Evie’s weight for a while but that seems to be over. After the first 2-3 weeks she still hadn’t gained back her birth weight but over the past week she’s gained 10 ounces! She’s a great sleeper (which was probably contributing to the lack of weight gain).

I have some funny ideas about what it means to be a "real family." A recent debate on an adoption forum made me feel bad about my family. But them we did the most family thing I could think of together. Now I feel good again. Pretty tired, but good : )

There is still one person I need to tell in in person, but she will be home from Iraq in a few weeks (please all keep your fingers crossed for Auntie Liza's safe return!) But I can't believe that we are are having another baby. I am so excited and a little terrified : )

My kids are playing so nicely together I don't know what to do with my self. They are going on make believe adventures, cooking letter soup, and going to Rowan's house (Jenny said "I be Rowan, Mommy be Nay, Ben be Joe, and Daddy be Joe too"). I hate to be so negative, but this is kind of too good to be true : )

This is the best quinoa I have ever made. Much thanks to Vicki and Carlos for leading me through the process : )
This was for a party. It makes a lot. We have the one weird food rule when we have a party. People are scared of what we eat, but I like people to leave having tried one new thing. So I serve something familiar with something weird on the side. This was our side dish with tacos.
1TBLS oil 2 onions, chopped 1 cup peppers, chopped (a mix is nice, but green is ok) 3 summer squash (I used one zucchini, one yellow, and one cousa) 2 packages Goya Sazon adobo (I didn't measure) 1 can pink beans, with liquid 3 3/4 cups of boiling water 2 cups of quinoa, rinsed
Heat the oil in a large pan. Add the onion and fry over a very low flame for a long time. When they begin to brown, add the peppers. When the peppers are soft add the squash and seasonings. Stir until everything turns a nice shade of orange. Add the boiling water, beans and quinoa. Turn up heat, bring to a boil, cover and reduce heat. The quinoa will be done in 20 minutes.

10:09 am - Can you hear my heart breaking?

After ten years of being the best running partner ever, my Phil is officially too old to run : (
I got up this morning to run for the first time in months. Phil did his happy dance when I got the leash. Then I ran very slowly for less than a quarter of a mile. He lagged behind, kept stopping to pee, and looked really sad. I had to take him home.
But as Jenny would say, "Phil the best!" He is the most wonderful dog and I hope we are blessed by his company for many more years, even though I have to run alone. Actually, my neighbors just got a Doberman puppy. Maybe he will run with me? I am so spoiled by running with a pit bull. I don't think I would want another, but the years of feeling safe while running hand the great company were awesome.
I had to run alone, but it was good and I feel great : )

So I wrote this almost a week ago. Then our internet went down. Then I didn't have time to post it. I thought that when summer came, I would have time? Ben and Jenny are good at stopping that.

Of course I have already gotten an e-mail from a parent who wants to know if there is any extra credit her son can do…..
I am so excited. I want to relax, but really I am off to over schedule myself right now.
I was watching Keir play with the kids this morning. Jenny asked Keir to draw mommy. He drew a picture of me holding a book. Ben came over and said “What’s mommy reading about?” Keir said “Islam.”
This is really today:
The binky fairy comes tonight. We spent weeks building her up. Both kids were really excited until it set in that they would have to go to sleep without binkies. Ben told me "Don't like binky fairy. She bad." There was some fussing, but now he is still singing. Jenny screamed hold murder for a short time, then went to sleep. At least I hope that is what the silence means...
The binky fairy is bringing some pretty awesome presents, so maybe they will like her in the morning : )
The kids were totally ready to give up binkies. I, on the hand, am heartbroken. My babies are so big!
